Our Water Climate

The climate of our waters plays a massive part in why our seafood is so delicious. This is primarily due to the combination of the cool waters from the North Atlantic Sea, which, combined with the warmer Gulf Stream, makes for the perfect temperatures that allow marine species to flourish in our waters.

Making up a staggering 8% of Europe's coastline from one country – even more, if you consider our in-shore waters too! Our seas are the perfect habitat for our marine species. The incredible rocky reefs adorned with sea fans, soft coral, and sponges make the ideal home for both shellfish and young aquatic life. Our seagrass also provides shelter to the many different species in our waters.



Sheer Passion

Scottish seafood would be nothing without the love and passion that goes into this industry every single day from everyone who works in it. Everyone from the fishers who are up at the crack of dawn every morning to the chefs prepping and cooking the delicious meals from noon 'til night. Haar Restaurant

Obviously, we had to list ourselves in this one. Here at Haar, we have championed Scottish seafood since day one. We are proud to offer our signature dish of St. Andrews Bay lobster which is caught fresh but metres from our restaurant. You can also try native delights like our dressed crab – caught in Dean's hometown of Arbroath, hand-dived local scallops or our showstopping Loch Etive trout with galangal curry and crab.

Dean and the kitchen team have long championed Scottish seafood as their flagship offering here at Haar, and we think that they certainly do each ingredient the justice it deserves.

Dulse Seafood

Dean's newest venture, Dulse, is a seafood restaurant right in the heart of the capital. They serve many classic Scottish seafood offerings with a contemporary spin.

Relax in their cosy and friendly surroundings. Sip on a cocktail or two and delight in their take on how our delicious seafood should be served.

The place is split into two levels - downstairs, offering an intimate experience with small plates, cocktails, and delicious wines. While upstairs hosts their incredible seafood restaurant.

Dive right into delicious plates such as Cumbrae oysters, BBQ octopus, trout pastrami and sea bream ceviche, to name but a few. All brought to you by Chef Dean Banks and his hardworking team.




Open Tuesday to Saturday, you can find them at 17 Queensferry Street. Right in the heart of Edinburgh.
